And for my next drink, we travel to Copenhagen. I recently made the trek for a work trip and brought Patty along so she could experience the city for the first time. Copenhagen is the beautiful capital city of Denmark. It sits right on a canal that eventually connects to the North and Baltic seas. Copenhagen has a lot of charm. The city is very clean, the architecture has a European feel, and the people are very friendly. Denmark is said to be one of the happiest countries in the world, and for good reason. Everyone speaks english well, making it an easy place for tourists to get by. Overall, a great place to visit.

One thing that really stood out to us was the food. Copenhagen has numerous outdoor cafes in the summer and a wide variety of delicious cuisines ranging from traditional Danish to American, and loads more. My favorite part was the cocktail bars. The city really appreciates the art of the cocktail. Bartenders take great care in making everything from unique to traditional drinks.

The cucumber, gin, and thyme fizz was inspired by a cocktail I had just around the corner of Nyhavn, Copenhagen (pictured below). Nyhavn, which translates to “New Harbour,” is a popular hot spot in the entertainment district with several outdoor cafes and bars. It overlooks the canal lined with old wooden ships. My variation is slightly similar to a gin and tonic but is made with soda water, muddled cucumbers, and a sprig of fresh thyme. The fresh muddled herbs compliment the natural herbal characteristics of gin, while the simple syrup and fresh lime juice add a slightly sweet twist. A refreshing cocktail that is perfect for sipping on a hot day.

Cucumber, Gin, and Thyme Fizz Recipe

  • 1½ ounces gin
  • ½ ounce simple syrup
  • 3 cucumber slices, muddled
  • 1 lime wedge, muddled
  • 1 sprig thyme, muddled
  • 1½ - 2 ounces soda water
  1. In a Boston shaker, muddle the lime wedge, cucumber slices, and thyme. Add simple syrup and gin and shake with a cup of ice for 10 seconds. Strain into a chilled highball glass and serve with a giant square ice cube.
  2. Top with 1½ - 2 ounces of soda water depending on taste preference. Garnish with a fresh cucumber slice and sprig of thyme.
