Chicken Skewers
- 3 boneless skinless chicken breasts
- 1 lemon juice squeezed
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon curry powder
- 1 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 garlic clove minced
- pinch sriracha
Thai Peanut Sauce
- 1/2 cup creamy all natural peanut butter
- 1/4 cup water
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon ground ginger
- 1 clove garlic chopped
- 1/2 teaspoon sriracha
- 1 tablespoon brown sugar
Cut chicken into 1 inch cubes, season with salt and pepper.
Combine all chicken spices in a large Ziploc bag. Mix well and add the chicken. Shake and maneuver the bag until chicken is fully coated in the blend of spices. The chicken should take on a yellow hue. Let marinate in the fridge overnight or for at least 1 hour in a pinch.
Meanwhile, combine all peanut sauce ingredients in a blender. Blend until smooth and creamy. Sauce should not be too thick, if so, add a little more water, 1 tablespoon at a time.
If using wooden skewers, let skewers soak in water for 30 minutes before grilling. This will help to prevent burning on the grill.
Preheat grill to medium-high heat, place skewered chicken on the grill, rotating sides every 3-4 minutes until all 4 sides are golden/chicken is fully cooked through, about 12-15 minutes.
Serve with peanut dipping sauce.
