The Pornstar Martini (also passionfruit martini) is a modern-day tropical cocktail made with fresh passion fruit juice, vanilla vodka, simple syrup, and fresh lime juice. It’s typically served with an ounce or two of prosecco or Champagne on the side. It’s citrusy, fruity, and unique thanks to the use of real passionfruit.

There are several variations of the Pornstar Martini on the internet. It’s hard to tell what is exactly “right” but I tried to simplify a few ingredients could so it’s more manageable to make at home. It can be difficult to find passion fruit…but I promise it’s well worth the extra effort.

Traditionally this drink is made with vodka and vanilla syrup (simple syrup infused with real vanilla or vanilla extract). To simplify the recipe, I used vanilla vodka and regular simple syrup. I think this adds any and all vanilla flavor the drink needs.

If you love a fruity drink, I have a lot to recommend. A classic Cosmopolitan if you enjoy cranberry, or maybe a strawberry tequila option? Wanting to stick with a martini, then give my blueberry martini a try.

Ingredients

  • Vanilla vodka: I like Stoli Vanilla the best. I prefer it over Grey Goose’s vanilla vodka.
  • Passion fruit: to make one serving, you will need two passion fruits. I was able to extract about 1 1/2 ounces of passion fruit juice (puree) from two passion fruits. Three passion fruits is enough for two cocktails.
  • Simple syrup: 50-50 blend of sugar and hot water. You can make on the stovetop or in the microwave.
  • Lime juice: always use fresh lime juice for best results. A handheld citrus squeezer makes this a really easy task.

How to Juice a Passion Fruit

There are two easy methods to extracting fresh passion fruit juice.

  • Manual juicing: cut a passion fruit in half and spoon out the pulp/seeds into a fine mesh sieve. Use a muddler or a spoon to crush the pulp, pushing the juice through the strainer, separating the juices. Not as efficient but easiest if you’re only making a single cocktail.
  • With a blender: cut a passion fruit in half and spoon out the full contents (pulp and seeds) into a blender. pulse the blender to separate the pulp from the seeds. The goal is to churn up the mixture without completely crushing the seeds. A few pulses is all you need. Pour through a fine mesh strainer, leaving seeds and solids behind. This works best when making more than 1-2 cocktails.

How to Make a Pornstar Martini

Step 1.

Extract passionfruit juice using one of the two methods outlined above.

Step 2.

Combine passion fruit juice, vodka, simple syrup, and lime juice in a cocktail shaker with a large cup of ice.

Step 3.

Shake vigorously for 15 seconds and double strain into a chilled coupe glass. Garnish with an optional halved passion fruit. Serve with a shot of prosecco.

Expert Tips

  • You can make about 2 cocktails with three passion fruits, depending on how juicy they are. The blender method will help you extract more juice.
  • Passion fruit seeds are completely edible, it’s OK if some end up making their way into the shaker.
  • Always double strain this cocktail. This will help catch any remaining solids/seed particles that end up in the shaker.

How to Serve

Don’t forget to serve with a chilled shot of Prosecco or Champagne, it’s all part of the presentation of this one. They’re not meant to be mixed together but sipped alongside each other.

Frequently Asked Questions

Can I Make This with Any Passion Fruit Juice?

If you can’t find real passion fruit then you can substitute it with store-bought passion fruit juice or puree. Be mindful of any added sugars as you don’t want the juice or the cocktail to be too sweet. Goya and Simply Squeeze brands make juices you can buy. I’ve tried them, they’re just not as good as real passion fruit juice.

How do you tell if passion fruit is ripe?

The outside of the fruit will develop a wrinkled or dimpled exterior, similar to the texture of avocado. Yellow passion fruit is typically yellowish when ripe and purple passion fruit turns to a brownish purple as they ripen. Both start out as green.

Ingredients 

  • 2 ounces vanilla vodka, I like Stoli Vanilla best
  • 1 ounce fresh passion fruit juice, 2 passion fruits yields 1 cocktail
  • 1/2 ounce simple syrup, 50-50 blend
  • 1/2 ounce lime juice
  • 1 ounce prosecco, on side

Instructions 

For the passion fruit juice

  • Manual juicing: cut a passion fruit in half and spoon out the pulp/seeds into a fine mesh sieve. Use a muddler or a spoon to crush/push the pulp through the strainer, releasing the juice into a bowl.
  • Blender: you can alternatively use a blender to separate the seeds from the pulp. Add all of the inside contents of a passion fruit to a blender and pulse a few times. This will loosen the pulp from the seeds and make juice extraction easier. Pour through a fine mesh strainer, leaving seeds and solids behind.

For the cocktail

  • Combine passion fruit juice, vodka, simple syrup, and lime juice in a cocktail shaker with a large cup of ice.
  • Shake vigorously for 15 seconds and double strain into a chilled coupe glass. Garnish with an optional halved passion fruit. Serve with a shot of prosecco.
