What is Honey Syrup?
Honey syrup is essentially simple syrup (sugar and water) made with equal parts honey and water (in place of sugar). It’s easier to make than simple syrup as the honey will very easily dissolve in warm water, unlike sugar.
Cocktails Using Honey Syrup?
Honey syrup is the perfect cocktail sweetener. I use it frequently in a few of my favorite cocktails. The Bee’s Knees and Brown Derby may be the most widely known classic cocktails made with honey syrup. I also use it in my own Grand Marnier margarita. It’s a warmer and more flavorful way to sweeten a cocktail with a subtle honey kick.
How to Make Honey Syrup in the Microwave
Heat 1/2 cup of water in the microwave for 45 seconds until warm. Stir in 1/2 cup of honey until fully dissolved and golden brown. The proper consistency is a little thicker than water when at room temp.
You can make in a saucepan on the stove if making larger amounts, it’s just extra work and not always necessary. If you do go the stove top route, just be sure not to boil or simmer the water. It only needs to be warm enough to dissolve/mix in the honey.
You can make extra syrup and store in the fridge for about a month. This recipe makes about 1 cup (8 ounces) and is good for 8 cocktails assuming you use 1 ounce per cocktail. Store in a mason jar or plastic squeeze bottle in the fridge and pull out whenever you need!Print

- 1/2 cup honey
- 1/2 cup warm/hot water
- Heat water in a microwavable safe measuring cup for about 45 seconds to 1 minute until warm (not boiling).
- Sir in honey until fully dissolved and golden. Store in the fridge in a mason jar or plastic squeeze bottle for up to a month.
Makes 1 cup (8 ounces) of honey syrup.
