What is Honey Syrup?

Honey simple syrup is made with equal parts honey and water. Honey syrup can be used in cocktails similarly to classic simple syrup (sugar and water), adding unique character and sweetness. It’s easier to make than simple syrup as the honey will easily dissolve in warm water, unlike sugar.

Cocktails Using Honey Syrup?

The bee’s knees, brown derby, and gold rush may be the most widely known classic cocktails made with honey syrup. I also use it in my own Grand Marnier margarita. It’s a warmer and more complex way to sweeten a cocktail with subtle honey notes.

How to Make Honey Syrup in the Microwave

Heat 1/2 cup of water in the microwave for 45 seconds until warm. Stir in 1/2 cup of honey until it’s fully dissolved and golden brown. The proper consistency is a little thicker than water when at room temp.

You can make honey syrup in a saucepan on the stove if making larger amounts, it’s just extra work and not always necessary. If you do go the stovetop route, just be sure not to boil or simmer the water. It only needs to be warm enough to dissolve/mix in the honey.

You can make extra syrup and store it in the fridge for about a month. This recipe makes about 1 cup (8 ounces) and is good for 8 cocktails assuming you use 1 ounce per cocktail. Store in a mason jar or plastic squeeze bottle in the fridge and pull it out whenever you need it!

  • 1/2 cup warm/hot water


Instructions

  1. Heat water in a microwavable safe measuring cup for about 45 seconds to 1 minute until warm (not boiling).
  2. Sir in honey until fully dissolved and golden. Store in the fridge in a mason jar or plastic squeeze bottle for up to a month.

Notes

Makes 1 cup (8 ounces) of honey syrup.
